Americans’ growing connoisseurship of cheese has coincided with our growing appreciation of fine beers. While the overall consumption of beer has remained fairly flat in the U.S. the consumption of the more “artisanal” types of beers (those that are hand-crafted in small batches) is on the rise. The per capita consumption of artisanal cheeses has increased relative to that of the broader category, though overall consumption of cheese has been on the rise for decades.
