Students will learn to prepare these delicious fried puff pastries while understanding how to use yeast dough, baking and frying. For those with a real sweet tooth, add a variety of extra sweet fillings to the beignets such as home-made chocolate and fruits. This is a 2 and 1/2 hour hands-on class. Discover the secrets of the delectable French puff pastry and traditional madeleines, perfect for your tea-time indulgence. Join us for a hands-on class where you'll learn the special folding technique, create a light custard cream, and bake it to perfection. Taste your creations or bring them home to share, along with recipes and detailed instructions.
Are you seduced by French pastries in bakery windows? Well, many of them are quite easy to master at home and require only a few pantry staples to make them. In this class, instructor Rebecca Ffrench will teach you to make a classic pâte à choux (a French pastry dough) and guide you through 3 delicious treats you can make using it including cream puffs, éclairs, and gougères (essentially a French cheese puff).
By the end of class, you’ll have an impressive selection of baked sweets and savories to enjoy.
You'll make:
HOW THESE VIRTUAL CLASSES WORK:
1) After registering, you will be sent a link to log into the class at the appointed date/time.
2) One day before the class you will be sent a copy of the recipes we'll be making, so you can cook from them again after the class.
3) Classes are 90 minutes and will have a maximum of 10 households attending each session.
4) This is a great opportunity to cook alongside friends and family! You can invite them to register their own households to join in the class, using the link in your confirmation email.

For NYC In-Person Classes:
You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to enjoy at the sit-down meal (not including our baking or dessert classes).
Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.
We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spatial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.
For Public Classes:
We have a firm 3 business days cancellation policy (for credit only) to ensure that we have enough time to re-fill your seat with another student.
Please note: Boot Camps require 6 business days notice to be rescheduled.
While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen.
Classes are not refundable.
For Culinary Boot Camps:
Because of the volume of Boot Camps we offer, we cannot offer make-up classes to everyone who misses a class, as it happens too often. As a consolation we have two options for making up missed classes, provided you alert us ahead of time.
In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.
