What you'll learn in this cheese making class:

Mild and milky, smooth and silky: any way you stretch it, I love fresh mozzarella! In this live online crash course I'll teach you how to make it at home, from home! First I'll set you straight on coagulation as I tell you how milk turns from fluid to firm curds.

Then I'll demonstrate how the mozzarella is made. You'll have a chance to roll up our sleeves and follow along as I show you how to turn curds into the beautiful balls that we know as fresh mozzarella.

Learn about selecting the right curd, proper water temperature, amount of salt and how to pull/fold to make your own mouth-watering ball of this Italian staple.

No experience is required! The ingredients list is below if you'd like to try to make the mozzarella at home. I use ingredients that are easy to find at local markets and equipment available in every home kitchen!

Virtual Class FAQ

What will be included in my Virtual Class package?

One ticket includes an access link to your live, online class. The class will be delivered via web conferencing software and feature a live, professional instructor who will walk you through a lesson as described above. You will have the opportunity to ask questions as well as participate from home.

How many people is my purchase good for?

Each ticket is good for one "device" (i.e. one computer, phone, tablet, etc. you'll be logging in from). This ensures we don't get more people in the class than the instructor can handle. Though we understand some people live together and will be working/learning together, the intent is that each class still allows for the same attention to attendees as if students purchased separately. Please be respectful of this!

Will I need anything from home to use in the class?
You will need a reliable Internet connection as well as a computer or device with which you can access your virtual class. We recommend you arrive to class 5-10 minutes early to ensure you're able to set up your device and connection. Additionally, if the class is more than just a lecture you will likely want any materials listed in the course description as "Materials Needed to Participate Fully", though you're welcome to purchase a seat and sit in and just watch.

Am I able to ask questions or interact with the class?
Yes, you'll both be able to ask questions using the chat function in the video hosting software as well as at certain intervals during the class via voice/audio. If the class winds up being on the smaller side, more spontaneous interaction/questions will be encouraged.

Do I have to show my video or speak during class?

While we recommend you do show your video and speak when encouraged to by the instructor, video and audio participation are never mandatory. We find classes have more fun experiences when people are engaging with one another, but understand not everyone will want to do so and that's ok!

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

Refund Policy

Students may cancel any time 48 hours or more before the class to receive a refund. Students canceling less than 48 hours before a class will receive a full credit towards rescheduling or purchasing a different class.

Carolyn is an absolute gem. Really a great teacher and a great personality. She knows how to explain things in a way that keeps you interested but is also fun! We had a great time. Our rennet wasn’t great so we didn’t end up with mozzarella but we feel confident we can replicate it on our own when we get better rennet!!!

The teacher was really great, but making cheese is extremely difficult. No one in the class got the results we should have- mine was essentially ricotta. I learned that I don't want to make my own cheese, but I had a lot of fun attempting it! The teacher was very funny and personable, but the ingredients provided through CourseHorse were terrible. Also they should write a better list of supplies: you need a thermometer and do not buy homogenized milk!

Instructor was great. Class was great. Most important, the cheese came out pretty good for a first-timer! It looked and tasted like mozzarella cheese, so I was very happy. There are 2 reasons that I’m only giving 4 stars and 5 stars. I want to note that neither of these issues seemed to be in the direct control of the instructor. First issue, the pre-class email with ingredients and equipment list was not as clear as it could have been. Specifically, the equipment list did not include a thermometer, which was pretty important since there is a step where you need to keep water at a constant 175-185 degrees F. The equipment list also stated you need a colander but did not specify it can’t have big holes in it (e.g., pasta colander will not work, need something more like a fine mesh colander). Second issue, the pre-class email encouraged participants to purchase rennet (animal or vegetable, tablet or liquid) from a specific supplier: https://cheesemaking.com/products/tablet-vegetable-rennet. All of us who did so had issues with our rennet tablets. Instructor asked how they were shipped, and it turns out the rennet tablets were not shipped properly. They need to be kept cool. Since we were all shipping in August with peak summer heat, many of us had issues. I put mine in the freezer (per instructions) upon receipt, but I still had to use more than double the amount because my bacteria was half dead. Yuck. Again, instructor was very helpful with all of these issues and still managed to help most of us coax something like mozzarella cheese from our efforts despite these issues. She ALSO offered any participant with issues to drop in for free on any upcoming class to try again, which was an awesome way to resolve these issues. She was really, really great.
