Class Description

Description

What you'll learn in this cooking techniques class:

Crepes are one of those dishes that everyone loves to eat, but not many people consider cooking at home. They couldn't be easier, and they are just right for every meal of the day, depending on which ingredients you put inside. We’ll make a classic crepe batter, and fill them with both savory and sweet fillings: vegetables with a cheesy Mornay sauce, and for dessert: classic sweet crepes with buttery caramelized oranges!

We'll make:

  • Sweet and Savory Crȇpe Batter
  • Green Vegetable + cheesy Mornay Sauce
  • Classic Crȇpes Suzette (caramelized orange crȇpes)

How these Virtual Classes work:

  1. After registering, you will be sent a link to log into the class at the appointed date/time.
  2. One day before the class you will be sent a copy of the recipes we'll be making, so you can cook from them again after the class.
  3. Classes are 90 minutes and will have a maximum of 10 households attending each session.
  4. This is a great opportunity to cook alongside friends and family! You can invite them to register their own households to join in the class, using the link in your confirmation email.

SHOPPING LIST for CREPES:

Because grocery shopping is not so easy these days, here is a sneak peek at what you will need in case that is helpful:

  • 2 eggs
  • 3 cups whole milk
  • 9 tablespoons (1 stick plus 1 tablespoon) unsalted butter
  • 1 large orange
  • 1 small onion, 1 scallion, or a shallot
  • 1/2 cup sugar
  • 1 cup plus 2 tablespoons all-purpose flour 1 pound green vegetables, cooked (spinach, arugula, Swiss chard, kale, broccoli, OR asparagus)*
  • 4 ounces cheese, or ½ cup grated (sharp cheddar, mozzarella, Jack, brie, Parmesan, goat cheese, Gruyere, OR Swiss)
  • 2 tablespoons Grand Marnier or Cointreau (optional)
  • Pinch of grated nutmeg (optional)

Remote Learning

This course is available for "remote" learning and will be available to anyone with access to an internet device with a microphone (this includes most models of computers, tablets). Classes will take place with a "Live" instructor at the date/times listed below.

Upon registration, the instructor will send along additional information about how to log-on and participate in the class.

School Notes:

PLEASE NOTE: If you are registered for a “VIRTUAL” class, you can disregard the information below.

FOR NYC CLASSES:

You’ll receive a complete recipe packet and enjoy a full sit-down meal at the end of class with your classmates. Our classes are BYOB, and you are welcome to bring a bottle to enjoy at the sit-down meal (not including our baking or dessert classes).

Our classes are hands-on, coupled with demonstration-style teaching. Everyone is situated at their own cutting board/chef’s knife station around a large wooden work table that accommodates the whole class (10 people max). We work together as a group, with the chef at the head of the table.

We focus on knife skills, preparing ingredients for cooking, and we strive to find every opportunity to offer you a hands-on experience at the stove and at your station, all within the spatial parameters of a single stove/family-style kitchen. We ask for volunteers to assist in all cooking.

Refund Policy

For Public Classes:

We have a firm business days cancellation policy (for credit only) to ensure that we have enough time to re-fill your seat with another student.

Please note: Boot Camps require business days notice to be rescheduled.

While it is not in our nature to say no, we are simply not able to accommodate last-minute illnesses or work-related conflicts. However, you are always welcome to send someone in your place, because we understand that these things do happen.

Classes are not refundable.

For Culinary Boot Camps:

Because of the volume of Boot Camps we offer, we cannot offer make-up classes to everyone who misses a class, as it happens too often. As a consolation we have two options for making up missed classes, provided you alert us ahead of time.

  • Send a friend in your place (and make them cook you a meal based on their new skills, as repayment!), or
  • Opt for our “Plan B” program: You can register for any single class that covers the same/similar coursework you missed, provided it still has an open seat 48 hours before it runs. That way you can take another class and we are just filling empty seats. Please note, this is a last-minute, drop-in option, not something that can be scheduled more than 2 days in advance. This does require that you keep tabs on our schedule to see what is available (the number of open seats is part of every class listing).

In any event where a customer wants to cancel their enrollment and is eligible for a full refund, a 5% processing fee will be deducted from the refund amount.

Thank you for understanding!

Very well organized. The chef paced the class so everyone had sufficient time to complete steps. It really was a cook-along format. The camera was focused on the chef’s countertop during demonstration which made it easy to follow.

I didn’t receive the recipes in advance as I usually do, and so planned to watch and take notes. But one of the other ladies in the class sent them to me at the beginning, so I hustled to the kitchen & got a late start. But the instructor was kind and patient, and I caught up. This course was as good as the other 2 I’ve taken. Well worth the funds, time & effort. When I posted my crepe photos on Facebook, a friend inquired and immediately signed up for a couple of courses after I sent her the link.

The taste of Food is 5 stars so the chef was good. However, the 4 star rating was because the speed of the class was a bit to fast, also the list of supplies and utensils needed were not 100% complete so we were searching for spices and utensils (i.e. clove, zester) , we bought food supplies we didn't get to use or discuss. We should have had access to the recipes it would have been nice to see recipe on screen or send it to us to print so we could follow along and now next steps. Overall we all had a good time it was FUN and I will still refer my friends and join other classes.

I signed up. I didn't take the class after all.. I wanted to make sugar free crepes. I purchased quinoa flour instead of regular flour in hopes of making a healthier crepe. Before the class started I asked the teacher if this would work. She said no. I felt defeated. Oh well!

Fun. A little fast in the beginning but I think that was because I didn’t know I had to have my wilted greens done ahead of time. Otherwise turned out great!

The class was great. The instructor was patient and answered everyone's questions. The crepes were terrific. Very pleased with the class and how good both the sweet and savory crepes came out. And the orange sauce was amazing too!

Class was well presented, friendly and instructive, easy to follow, fun to watch and apply in real time since the instructor had a camera showing the bowls, pans, and utensils are they were used. The resulting crêpes were delicious.

Would give 10 Stars! After taking several of CourseHorse classes this is by far the most organized and best demonstrated. The ingredient list totally matched the recipes and the crepes were delicious. Chef Jon gave excellent tips for execution, serving, modifying and for storing. All recipes were able to be done within the time slotted for the class. Chef Jon is very patient and made the class fun! Looking forward to taking more classes with this Chef!

Review Summary by CourseHorse

Students of the Crȇpe Workshop (Virtual) praised the organization of the class and the pace set by the chef, ensuring they could follow along comfortably. They highly valued the generous 'cook-along' format which was possible due to the chef's demonstration via focused camera angles. Participants reported immediately putting new skills to use beyond the class, baking more crȇpes, and incorporating the dishes into their everyday meal routines. Overall, the experiences were enjoyable and resulted in delicious crepes. The chef's expert advice and patience were highlighted as pivotal to this positive learning experience. Regrettably, one student didn't participate due to dietary restrictions, but the general sentiment shows that students felt highly satisfied with their developed crȇpe-making skills. "The ingredient list totally matched the recipes and the crepes were delicious. Chef Jon gave excellent tips for execution, serving, modifying, and storing." "The chef paced the class so everyone had sufficient time to complete steps. It really was a cook-along format." "I was able to see exactly where I have been making mistakes."
