What you'll learn in this cooking techniques class:

In the south of France, pesto (or pistou, as they say locally) is mixed into this vibrant vegetable soup, a classic home-made dish if your home happens to be in Provence. Along with this, you’ll learn to prepare a tasty cornish hen with Chef Paul’s signature rub mixture, and you’ll sharpen your knife skills to cut it properly. A warm lentil stew and rich scalloped  potatoes made in the French style round out this delicious menu.

  • Provençal Vegetable Soup with Pesto 
  • Roasted Cornish Hens
  • Green Lentil Stew with a Warm Vinaigrette Dressing
  • Scalloped Potatoes Baked with Milk, Cream, and Fresh Nutmeg

Students below 18 years old should be accompanied by a parent/guardian.

    We learned SO MUCH - I cook a lot and learned amazing tips - how to make red wine vinegar - what knives to buy and how to treat them well - how to make vanilla extract - we travel together on a girl trip yearly and will be back next November - have already recommended your class to everyone!!

Miette

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
