Description

What you'll learn in this french cooking class:

You’ll learn how to prepare delicious Cornish hens for this classically French lunch, starting out with cheesy puff pastry balls, followed by a refreshing salad, and a French double whammy milk and cream potato recipe. Topped off with a yes-you-can-make-it soufflé. Vive la France!

Learn to cook the following:

  • Classic French gougères
  • Mesclun salad with fennel and orange
  • Roasted cornish hens
  • Potatoes baked in milk and cream
  • Raspberry soufflé

Students below 18 years old should be accompanied by a parent/guardian.

Our space is ideal for socially distanced food preparation and dining (long tables, a wall of open windows in the dining area), and it is professionally cleaned before and after each class. Classes will be limited to 6 people and everyone will wear masks during the food prep.

Refund Policy

Classes are not refundable, but you can reschedule if we are notified at least 7 business days prior to the class you have signed up for. If you find you can not make it to a class at the last minute, please consider finding someone to take your place.

    I had a great learning AND culinary experience. Chef Paul was informative, engaging, funny and an excellent chef. The recipes were easy to follow, but the techniques he taught us were invaluable to get us all, relative novices at french cuisine, heading in the right direction. And to think, we got to eat the delicious fruits of our labour! I received this course as a Christmas present and I have been talking /thinking about it ever since I completed it. I will definitely return for additional courses and I will be bringing family and friends!

    Class was wonderful, teacher was fantastic, food was delicious! My only other feedback would be that the class location was changed about a month before the class and I was notified endlessly of this, by email and phone, and by email and phone again. I appreciate the reminders, but even when I re-confirmed that I would be attending at the new location I continued to get them.

Miette

Miette means, "little crumb" in French. This name was chosen while giving cooking classes at the restaurant Tartine in the West Village. Since Tartine means "slice of bread" we thought it an appropriate name for the school!

There are 2 entrances located between Umbertos Clam House. One is to the left if facing the restaurant and that is 1 flight up the stairs you will need to press 11 then the green bell key and wait to be buzzed in. The other is to the right of the restaurant that is a black street level elevator and just press the elevator button to gain access and go to the 2nd floor. There is also an intercom system there as well in case the elevator is locked. Closest Train stations are: B,D at Grand Street,N, R, J, Q, 6 at Canal Street. Parking is available on Elizabeth & Mott between Hester and Canal Street.
