Teaches at The Brooklyn Kitchen

David Siegel is a personal chef and culinary instructor in Brooklyn, NY. He has been cooking for most of his life. It all started with chicken soup, and an enthusiasm for creating delicious and satisfying meals for friends and family took off from there. He started working at restaurants while still in high school and then decided to study Hospitality Administration at Boston University. He cooked through college and continued slinging pots and pans in Boston after graduation. Craving a change of scenery and new horizons, David moved to Portland Oregon in 2005. He quickly immersed himself in the dynamic food scene there, cooking at various notable restaurants. Portland helped tune him in to the beauty of cooking simply with seasonal ingredients. Many off hours were spent at home, re-trying new techniques learned at work and building on that knowledge. David started the East Side Dining Club with friends and together they put on a series of pop-up dinner events. The success of this venture led to his first executive chef position at the newly opened Belly Timber Restaurant in South East Portland. David presided over the kitchen and a weekly-changing menu there for two years. The East Coast was calling him back, though. Before answering that call, he spent nearly a year traveling through Asia and Europe. He settled in Brooklyn near the end of 2010 and set to work connecting with the peerless food world of New York City. Since then, David has been working as a personal chef and teaching culinary classes. He has also helped develop menus and products in the local artisan food community, and has helped local markets build a social media presence.

Great space and fun class. Was an entirely different menu than what was listed which was disappointing. But overall, will definitely go back again.

It was a nice class overall, however I did expect us to prepare something which will be more of a main course and it didn't really feel like thats' what we are doing. Food was good, instructor was very nice and I have managed to pickup a few cooking tricks I did not know before so overall it was good.

Enjoyed this class & learned a lot about the foundations of starting a different types of sauces, but wish it was more hands on.

Loved the course! It was a great, short intrduction to making stock from scratch, and basic sauces anyone can make. The class was more demo-style than hands-on, but the instructor was very engaging and let us see/smell everything along the way. Recipes to take home, and lots of ideas for taking your home cooking up a notch! Plus we got to taste all the delicious sauces made during the session for dinner (+ wine!) Yummm! I had an issue with registration, but both The Brooklyn Kitchen & CourseHorse were very helpful in sorting everything out. I took this course for work, but will definitely be returning to The Brooklyn Kitchen to take another class (and browse their wonderful store again! Taking a course there gets you 10% off in the store.) :)
