Ted Siegel

Teaches at The Institute of Culinary Education

Ted Siegel’s culinary life began with job with a gourmet food store when he was 15. Although hired to serve as a delivery boy, he found himself fascinated with the kitchen and continued to work there through high school and college. After finishing culinary school in 1982, Siegel moved to California and promptly landed a job at Chez Panisse. For three years he worked alongside Alice Waters, Joyce Goldstein, Steven Sullivan (who went on to found Acme Bakery) and Lindsay Shere. Eventually, he moved back to New York City and cooked in the kitchens of Bistro du Nord, Orso, L'Acajou, Coco Pazzo and Danal. He joined the staff at ICE in June 2001. He says, “I enjoy that my students are so varied in terms of age and other demographics.” He uses his over 40 years of experience to help them discover their culinary voices in the kitchen by preparing them for the industry and sharing his many years of expertise.

    The only thing I didn’t like was the chef had a runny nose and kept cleaning it with the back of his hand.

    This was a solid class - the instructor was thorough and enthusiastic and the expense of the class has a lot to do with the fact that they are providing high-quality meats, fish, and produce per-person. I only wish that there had been some take-aways from the class, meaning some sort of a take-away, sheet or something that reminds you of the steps so that when you go home, it's easier to remember. But otherwise, everything was great!

    This class is great for understanding the basics of knives and safety. Ted is an amazing instructor who jam packed as much information and tips which can translate to your own prep in the kitchen! ~To many tasteful meals, Bliss in the Kitchen

    The teacher was very good. It would have been nice to do a very brief overview of how we were going to spend our 3 hours. Some networking might have been cool. Understanding where the cut vegetables was going. Also, just cutting vegetables is interesting...but what about fruit....what about protein? The class was interesting, but I don't think I'd recommend it to a friend. Finally, the cost was a little high.

    This class was so incredibly helpful. Not only did I learn a ton of tactics to chop faster, more safely, and more accurately, I also learned how to really take care of my knives and extend their life. I had no idea how dull I'd been letting my knives at home get, in the long run I'm going to save a lot of money by keeping them in better condition. If I could give this class more stars I would!
