Born in France, Simon Herfray began his pastry education in the local Vendee region, before earning a master’s degree in pastry and bakery at the local vocational pastry school. He’s worked at renowned bakeries and restaurants like Aubaine and Blue Bird in London, traveled to Australia to bolster his technique, and entered the NY pastry scene as the Executive Pastry Chef at Falai LLC in 2009 before lending his talents Cafe M. Today, he whips up spectacular desserts for the sister restaurants Bacchus and La Defense Bistro in Brooklyn, and plans to open French’Encas, a company designed to teaching others the art of French cooking through classes and workshops.
Located in the heart of East Harlem, Atelier Sucré's commercial kitchen offers a space to create delightful, delectable sweets. We welcome students of all experience-levels and provide all the equipment and tools needed. A kitchen is a special place for chefs; it's where the magic happens.
Class was super fun. Instructor was great and knowledgeable.
It was very enjoyable and relaxed! The bagels came out great! The instructor was very knowledgable and professional. There was a little bit more down/wait time than your typical cooking/baking class but overall it was worth it.
This was a great class! Chef was amazingly thorough and had such patience with us. I loved it and cannot wait to take another class. Amazing croissants
Fun, informative, delicious!!!!
I had the flu and wasn’t able to reschedule the class and it appears that they prefer you show up to a baking class with a 101F fever vs. rescheduling you for another class that isn’t yet booked. Extremely disappointed, as the last thing I want is someone sick cooking with me. Being in HR, I don’t want people with this type of fever or cold in the office.
Our instructor was amazing!
Loved the chef who instructed the class. She was brilliant and very easy to engage with.
Loved the chef!! The croissants were incredible!!
This was an excellent class. It was fun, engaging, hands-on with delicious croissants to eat at the end! It was worth the money. It was not a romantic date class, as much as it was just a cooking class. I would have enjoyed it if each couple could make their own croissants instead of sharing with another couple.
We had very little opportunity to “make our own” chocolates. There was only one station set up where the instructor led the class asking for “volunteers” to stir or add an ingredients at times. Most of the class was spent in silence watching not because the instructor was talking but literally it was silent. We would like a refund!
