What you'll learn in this butchery class:

Do you not know your sirloin from your brisket? Did you know there’s a difference between inside skirt steak and outside skirt steak? Do you find yourself staring hopelessly at the meat case? Don’t worry!

In this demo class, Giancarlo & Adrianna will answer all your beefy questions as he takes you on a tour from nose (well really neck) to tail while breaking down a whole side of beef. In addition to going over all of the cuts that come off of a steer, we’ll talk about livestock agriculture by comparing small-scale farming with industrial commodity meat. You’ll also pick up tips on how to shop smart for meat in general as well as pointers on the ideal cooking methods for each cut mentioned.

Please wear a sweater; classes take place in our cutting room which is usually at about 60 degrees.

A super fun, well prepared, educational experience that was shocking how fantastic it was! Just be sure to bring a winter jacket... and an appetite for learning and eating fine meats!! Thank you to the Dickson's butchers who took the time to give us a very memorable fun evening! The other class attendees were definitely my peeps for sure. Such a nice group.
